ZOODLES

This is one of my go-to weeknight meals because its quick, simple and healthy!


One of my favorite ways to use a spiralizer is for zucchini noodles, AKA "zoodles." Ask any one of my friends, and they will tell you that I introduced them all to the world of zucchini pasta. They are super versatile, you can top them with your favorite sauce, meat and veggies. Here are my basic weeknight zoodles, topped with Trader Joes Spicy Italian Chicken Sausage, Rao's Homemade Tomato Basil Sauce, and mushrooms/onions.

  • 1 package (2-3) organic zucchini squash, spiralized

  • 1 pack of Spicy Italian Chicken Sausage

  • 1 cup mushrooms, chopped

  • 1/2 sweet onion, chopped

  • 1 cup of your favorite pasta sauce (when on Whole 30 I use Rao's)

  • Olive Oil

DIRECTIONS

  1. Heat 3 chicken sausages in skillet with 1 tbsp. olive oil over medium/high heat, 5 min

  2. Add in chopped onion and saute for 2-3 minutes

  3. Slice chicken sausage into 1/2 inch slices, return to skillet

  4. Add in chopped mushrooms and spiralized zoodles

  5. Cover with lid, let noodles soften for 5 minutes, stirring occasionally

  6. Add in 1 cup of pasta sauce, let simmer (low heat) for 3 minutes until heated through

  7. Top with red pepper flakes, garlic powder, salt and pepper for taste!

*This recipe makes 2-3 servings. I usually take half for lunch the following day.


*If you do not have a skillet big enough to make it all in one, make the sausage separately and then combine all ingredients at the end.

Here I topped the zoodles with Trader Joes Spicy Italian Chicken Sausage which is #whole30 and #paleo, but I often use Trader Joe's Frozen Turkey Meatballs as well. Rao's Homemade can be found at Walmart or big chain groceries.
