Save time, money, and calories by prepping your lunch ahead. The following ingredients from Trader Joe's will help you prep 4 salads for under $20. That's not even $5 a salad! The best part? There's no cooking required! Trader Joe's has a variety of already cooked chicken. I often use the "Just Grilled Chicken Strips," but with the greek salad, I prefer to go with the "Lemon Pepper Grilled Chicken." You can find these in the refrigerated section near the prepackaged salads.

INGREDIENTS
Organics Baby Spring Mix
Cruciferous Crunch Collection
Cucumbers
Organic Grape Tomatoes
Grilled Lemon Pepper Chicken
Green Goddess Salad Dressing
DIRECTIONS
Divide spring mix and crunch mix evenly into four portions
Slice the pre-cooked chicken into four portions
Dice cherry tomatoes and cucumbers into bite size pieces
Top lettuce with tomatoes, cucumbers and chicken
Keep green goddess dressing separate until ready to eat!
