Spiralized Sweet Potato Skillet

Trust me, this dish is easier to make than it looks!

This recipe uses some of my go-to kitchen items including the Spiralizer and 10 1/4 inch Lodge Cast Iron Skillet. Both of these items can be purchased on Amazon through the links below. If these items aren't currently in your kitchen, you can use a regular skillet and dice the potatoes instead of spiralizing.









To spiralize the sweet potato, first wash and dry the potato. If you choose, you can use a peeler to remove the skin on the potato. Cut each end of the potato to create a flat surface on either side. Use the 6mm blade to create the sweet potato "noodles."







INGREDIENTS

  • 2 medium sweet potatoes, spiralized (if you do not have a spiralizer, dice in 1/2 inch cubes)

  • 1 lb. ground turkey

  • 1 red bell pepper, chopped

  • 1 cup kale

  • 1 small sweet onion, chopped

  • Olive Oil

  • Seasoning Salt (I use Trader Joe's)

  • Garlic Powder

  • Salt/Pepper

DIRECTIONS

  1. In a skillet over medium/high heat, heat 2 tbsp of olive oil

  2. When hot, add in chopped onion and cook until edges begin to brown

  3. Add in ground turkey and use a spatula to break up the turkey into crumbles

  4. Cook turkey until browned, about 8 minutes

  5. Add in seasoning salt, garlic powder, salt and pepper

  6. Add in spiralized sweet potatoes and chopped red pepper

  7. Cover with a lid to allow sweet potatoes to soften ~10-12 minutes, stirring occasionally

  8. Remove lid and add in kale, let kale heat for 1-2 minutes before serving
