Easy weeknight dinner that will fulfill your pasta cravings
Spaghetti squash is a great substitute for pasta and it's easier to make than you may think! There are several ways to make spaghetti squash, so I wanted to share three different recipes I use:
Ways to Make Spaghetti Squash
- Microwave
Put several slits spaghetti squash with knife
Microwave for 10-12 minutes (medium/large squash), turning the squash every 3 minutes
Let squash cool, then carefully cut squash in half with sharp knife
Scoop out the seeds and discard
Use fork to scrape out the squash into "spaghetti"
- Instant Pot
Cut spaghetti squash in half using sharp knife(I microwave first for 1 min to soften)
Scoop out the center and seeds
Pour one cup of water in Instant Pot
Depending on size of Instant Pot, place half or whole squash in pot
Use the "Manual" high pressure setting for 6 minutes
Use a quick release to release pressure
Use fork to scrape out squash into "spaghetti"
- Oven
Preheat oven to 350
Use a sharp knife to cut the squash in half (microwave first to soften)
Scoop out the seeds
Place cut sides down on baking sheet (can sprinkle olive oil/salt/pepper)
Bake for 35-45 minutes
Let cool, and Use fork to scrape out squash into "spaghetti"
SPAGHETTI SQUASH CHICKEN "PARM" RECIPE
INGREDIENTS
1 spagetti squash
2 chicken breasts
1 cup mushrooms
1/2 sweet onion
Your favorite pasta sauce (when on Whole 30 I use Rao's)
Olive Oil
DIRECTIONS
Preheat oven to 375 degrees
Cook spaghetti squash with your preferred method above
Dice onion and mushrooms
Heat a skillet on medium/high heat and add 2 tbsp of olive oil
When hot is hot, add onions and stir until fragrant and begin to brown
Sear chicken breasts in skillet, ~5 minutes per side, set aside when cooked
Remove skillet from heat combine spaghetti squash, onion, mushrooms and pasta sauce
Return chicken on top of squash and add additional sauce to chicken breast
Place skillet in oven and cook until heated through, ~10 minutes
*if not Dairy-free/Whole 30/Paleo, top chicken with cheese before placing skillet in oven
